Summer is without a doubt one of my favorite times to entertain.
The doors and windows are open, the summer tunes are flowing, there are friends and family on the patio, Grant is at the grill (with Polly by his side, of course) and everyone has a drink in hand. While I always love to plan a few, fun summer parties, some of the best times I’ve had are impromptu get togethers when my friends or my brothers stop by. I like to have a stocked bar cart and some charcuterie fixings on hand, but let’s be serious, that’s not always the case.
Today I’m rounding up some of my favorite summer cocktails to make when you are in a pinch. Whether you’re entertaining last minute guests or are just looking for an easy cocktail to serve at your party, these recipes are sure to be crowd pleasers this summer. Cheers!
Strawberry Tequila Sodas
Got some fresh strawberries on hand? Try this refreshing tequila based drink. All you need are some strawberries, limes, tequila and tonic water.
Ingredients
- 3 Big strawberries with the tops cut off
- 1 Ounce of tequila
- Juice of 1/2 a lime
- 2 Ounces of tonic water
Directions: Muddle strawberries in the cup you’ll be serving the drink in. Then add tequila, lime juice and tonic water. Top with ice. {Serves 1}
Lime Shandy
If you have some beer on hand - try a lime shandy! All you need is beer, lime soda {Sprite works just fine}, key limes and ice.
Ingredients
- 3 Cups beer
- 2 Cups lime soda (aka Sprite)
- 5 Key limes
- Ice
Directions: Slice up key limes and place in pitcher. Add beer and soda and then stir it up. Pour over a glass filled with ice. {Makes 1 pitcher}
The Paloma
This is a great {and simple} alternative to the classic margarita. Make this cocktail even easier by using grapefruit soda instead of grapefruit juice and sparkling water.
Ingredients
- 1 1/2 Ounce white tequila
- 3 Ounces grapefruit juice
- 2 Ounce sparkling water
Directions: Add ice, tequila and grapefruit juice into a shaker. Shake for 15 seconds and then strain into a glass filled with ice cubes. Top with sparkling water, stir and drink. {Serves 1}
Rosé Lemonade
Almost everyone I know has at least of bottle of rosé in their fridge during the summer, and this cocktail is refreshing alternative to a regular glass of wine. All you need is rosé, lemonade, club soda and ice.
Ingredients
- 1 Bottle of rosé
- 3 Cups lemonade
- 1 Can club soda
- Ice
Directions: Add the full bottle of rosé to a pitcher with ice. Stir in the lemonade and top with club soda. {Makes 1 pitcher}
Flirtini
Many of you may recognize this drink from Sex & The City. It is such a simple and delicious cocktail to make - perfect for an evening with the girls or drinks by the pool. All you need is vodka, champagne and pineapple juice.
Ingredients
- 1 ounce vodka
- 2 ounces champagne
- 2 ounces pineapple juice
Directions: Combine all ingredients into a glass with ice! {Serves 1}
